In return for having an open mind, you’ll find yourself feasting on a steaming pot of soup on a hot summer day…and it will actually cool you off! Go East, young man, and eat well.
Mezze is akin to a small buffet for a table of diners. It’s more of a grazing buffet, where everyone nibbles from the small plates of delicacies. Hummus and tabouli accompany vegetables, salads and grilled meats. Lighter fare includes fresh melon, regional cheeses and nuts. You’ve probably eaten hummus and tabouli and crave them, but don’t know what’s in them. Hummus consists of pureed chickpeas (garbanzo beans), tahini (ground sesame seeds) and spices. Tabouli is made with diced tomatoes, parsley, mint, bulgur, and onion. It’s seasoned to taste with lemon juice, olive oil, and salt.
